一、背景與目的

全球化和中國(guó)經(jīng)濟(jì)穩(wěn)定增長(zhǎng)給社會(huì)帶來(lái)了多種變化,國(guó)民食物消費(fèi)的社會(huì)變遷正是這一歷史進(jìn)程的深刻反映。城鄉(xiāng)流動(dòng)、可支配收入的增長(zhǎng)、不斷提高的健康和福祉意識(shí)重新塑造了公眾對(duì)食物的需求,包括食物的可獲得性、種類、數(shù)量和質(zhì)量。伴隨著中產(chǎn)階層的崛起,消費(fèi)者越來(lái)越重視食物的原真性、安全性和健康性等問(wèn)題。政府和食品生產(chǎn)企業(yè)也越來(lái)越關(guān)注食品安全和食品營(yíng)養(yǎng)等問(wèn)題。飲食問(wèn)題關(guān)乎國(guó)民健康和社會(huì)經(jīng)濟(jì)的可持續(xù)發(fā)展。但是,工業(yè)化的傳統(tǒng)食物消費(fèi)系統(tǒng)造成飲食生產(chǎn)與消費(fèi)的“斷裂”,進(jìn)而影響從田間到餐桌的可持續(xù)飲食系統(tǒng)構(gòu)建。這致使全球范圍內(nèi)大量研究者關(guān)注這一領(lǐng)域。

全球化視野下,國(guó)際食物貿(mào)易往來(lái)不斷增強(qiáng),飲食原真性、飲食安全和可持續(xù)發(fā)展議題應(yīng)當(dāng)引入國(guó)際合作與文明對(duì)話機(jī)制。同時(shí),飲食可持續(xù)性的研究,應(yīng)鼓勵(lì)應(yīng)用跨學(xué)科的研究方法和科學(xué)思維。眾多利益相關(guān)者(生產(chǎn)者、中間商、消費(fèi)者)和多種變量因素(政治、經(jīng)濟(jì)和環(huán)境)都對(duì)可持續(xù)飲食系統(tǒng)產(chǎn)生影響,研究者有必要引入更為包容和全面的研究視角。

在此背景之下,中山大學(xué)旅游學(xué)院聯(lián)合中國(guó)食文化研究會(huì)、紐卡斯?fàn)柎髮W(xué)、杜倫大學(xué)、浙江工商大學(xué)人文與傳播學(xué)院、中國(guó)兒童中心兒童營(yíng)養(yǎng)與健康研究中心、惠州城市職業(yè)學(xué)院組織了本次學(xué)術(shù)會(huì)議。會(huì)議將邀請(qǐng)來(lái)自亞洲、歐洲、非洲和南美洲各高校的學(xué)者分享飲食文化研究領(lǐng)域的新觀念、新方法和新趨勢(shì),共同探討全球化和中產(chǎn)階層崛起背景下食物消費(fèi)的社會(huì)變遷,以求推動(dòng)全球食物可持續(xù)發(fā)展。會(huì)議也邀請(qǐng)國(guó)內(nèi)專門研究機(jī)構(gòu)和青年飲食研究學(xué)者組織網(wǎng)絡(luò)與“虛擬”食物消費(fèi)景觀、少數(shù)民族飲食文化、可持續(xù)性與飲食文化教育(食育)、信任與食品安全、外賣與食品新零售等專題論壇。我們期望通過(guò)這一交流平臺(tái),建立更為廣泛的學(xué)術(shù)交流與合作關(guān)系,推動(dòng)中國(guó)飲食文化研究走向世界。

四、征文與報(bào)名事項(xiàng)

   1、提交論文摘要截止日期:2019年5月5日;提交論文全文截止日期:2019年6月5日;會(huì)議召開日期:2019年7月5日至7月7日。

   2、中文摘要500-1000字或英文摘要300-500詞,以電子郵件方式提交給會(huì)議聯(lián)絡(luò)人(會(huì)議指定郵箱:food_studies@163.com)。郵件主題請(qǐng)務(wù)必注明“飲食文化生產(chǎn)國(guó)際學(xué)術(shù)會(huì)議+文章題目+單位+姓名”。

   3、會(huì)議委員會(huì)將對(duì)稿件進(jìn)行審核并在2019年5月15日前通知作者。摘要被錄用者,須在2019年6月5日前提交論文全文(須包含英文摘要300-500詞)。論文通過(guò)審查后,至少一位作者必須注冊(cè)并出席會(huì)議。

   4、會(huì)議工作語(yǔ)言為英語(yǔ)。將邀請(qǐng)飲食領(lǐng)域的年輕學(xué)者組織分論壇,也將特別設(shè)置中文論文討論組。

五、注冊(cè)標(biāo)準(zhǔn)

注冊(cè)費(fèi):一般代表注冊(cè)費(fèi)1200元,研究生800元。學(xué)生身份注冊(cè)需提交身份證明。

注冊(cè)費(fèi)包含:會(huì)議召開期間的會(huì)務(wù)費(fèi)、資料費(fèi)和餐費(fèi)。往返交通和住宿等費(fèi)用自理。

BACKGROUND

Globalization has brought dramatic changes to food consumption cultures in different regions. In developing settings such as China, factors including rural-urban migration, rising disposable income, and awareness of health and well-being reshape the public's demand for the availability, variety, quantity and quality of food. The rising middle-class consumers pay more and more attention to the authenticity, safety and health of food. Government and food producers increasingly recognize the importance of food safety and nutrition. Food consumption is related to the public health and the sustainable development of the society, and yet industrialization of the food system creates a “break” or “distance” between food production and consumption and compromises sustainability from the field to the table.

 

Furthermore, with growing international food trade, a perspective of international cooperation should be introduced to promote food safety and sustainable development. Issues of food safety and sustainability need to be addressed through interdisciplinary thinking. We call for inclusive and comprehensive research perspectives considering different stakeholders (producers, middlemen, consumers) and multiple influencing factors (politics, economy, and environment) work on the global sustainable food system.

 

The School of Tourism Management at Sun Yat-sen University will be hosting the International Conference on Interdisciplinary Food Studies: Transforming Landscapes of Food Consumption. We will invite scholars from universities in Asia, Europe, Africa, and South America to share emerging and innovative ideas, approaches and trends on the changing landscape of food consumption in the context of globalization and the rise of the middle class, aiming to promote food sustainability. We sincerely hope to establish a global research network through this exchange platform.

  5. Notification of acceptance will be made by May 15, 2019.  Presenters need to submit full paper by June 5, 2019. After acceptance, at least one author needs to register and attend the meeting.
